The big lake breeze transforms a warm day into a cool evening. Perfect for a faux fire and a ship shape stout. Time to sip on a ship to shore Shipman’s for sure. Decew Falls* brewers remind me of Gateway City, both are brewers in love with their local history. Every DF can tells a not so tall tale about local legends and this stout is no exception. St Catharines was originally referred to as Shipman’s Corners from 1798 to1808, named after Paul Shipman’s tavern and stagecoach depot. Back in the day I imagine a Shipman’s stout would be a welcome reprieve after a dusty stagecoach ride over those corrugated like corduroy roads.
A lakeshore port of a pour, black as an alley cat. Roast malt and cocoa aroma. This stout starts out full flavoured, watery light and with a bit of an espresso bite, some would say a harsh finish. After a few swigs I settled into this full flavoured brew, a nice mix of classic roast and sweet, the harsh and the coffee beans are has-beens, MIA. At this stage it’s as close to a black lager as a stout can get or vice versa.
It quickly evolved as it warmed, and the coffee returned for a full-flavoured classic stout with a softer mouthfeel, smooth, with just the right balance, my ship has come in. I found the evolution interesting and enjoyable.
