42 years ago, just like Alice Cooper, I was singing school’s out forever,* but here I am back again with a visit to Niagara College for what they so fittingly refer to as “a beer lesson in a can”. Back in the day I was studying fluid dynamics, these days I’m studying dynamic fluids.

NC has a teaching brewery,** molding and shaping the future craft brewers of our country, and me playing the guinea pig to their exotic experimentations. I recall volunteering for a cleaning when my daughter was at college studying as a dental hygienist, if I remember correctly I needed a transfusion after. Let’s hope this experience is less painful.
A pour as black as what AC/DC came back in,*** and as thick and rich as Jack Black. A grainy dark roast cocoa aroma, an invitation to indulge. Contrary to the substantial pour it has a light mouthfeel approaching a dark lager in consistency. The taste is a full roasted malt, a bit nutty, with dry espresso bitters on the finish. This progress report notes some cocoa starting to join the class. It all comes in to balance early in the quaffing. By later in the tasting the cocoa had moved to the front of the class.
A classic full flavoured brew with a lot going on, all well balanced. This school’s out stout passed with flying colours.
