Big Tim (she calls him Fred) from Cape Breton is all Spruced up after working on the coal boat, according to our old friend Stompin’ Tom.** And I imagine working on the coal boat would build up a powerful thirst, I mean I’m just sitting watching the ballgame in my lazy boy and I’m some parched. So I took the liberty of indulging in Tim’s IPA, hope he doesn’t mind.

A golden hazy pour with a bit of fog rolling in the Cape Breton seaside. A nice fruit hop aroma to whet my IPA (insatiable pint appetite). My first drink was fruit with hops and a bitter pine (spruce maybe) finish which really grabs you by the ……. taste buds (what did you think I was going to say?). The pine bitters stand out but not too much, they support the refreshing. Second swig finds the bitters still pronounced but balancing out into a very tasty and refreshing IPA, definitely with pine bitters. As it warms the pine bitter combo becomes a bit more aggressive but still ok. Maybe too piney for some but refreshing.

A good traditional IPA with a strong pine bitter finish.

*Editor’s Comment: the COMDB Translation Department are currently on work to order over a recent grievance so in their absence I will assist. Sláinte means "health" in Irish and Scottish Gaelic, which would include the Gaelic of Cape Breton. It is commonly used as a drinking toast, like “Cheers”.
