Do Do That Yuzu That You Do

Tsushimas Sun Rice Lager with Yuzu

The Grist Brew Kitchen

4.2% Alcohol

3 not 10 Yuzus

To all you brewers who brew good brew, we appreciate all you do do, but one thing not to do, is to overdo the yuzu.

JT took at 3:10 to Yuzu and enjoyed the trip. I Yabai dabadooed an impressive Black Bellows rice a roni  Lager but I am new to yuzu.  So now we have a Grist rice lager with fresh picked yuzu from the sunshiny shores of Tsushima.**

It pours very light into the glass but once there takes on a golden hue and a very bubbly personality. It has the aroma of a sour, not a sour aroma, but a very tart fruit aroma. It has a light fruit taste with crisp, tart, bitters. A very light body, and as bubbly as it looks. It is refreshing, crisp and tart. This is about as close to a sour as you can get and still call yourself a lager. It is different, the yuzu is definitely front and center, and I think a touch too much. A bit less tart would have made for a bit more crisp?

A yuzu featured rice lager, light, tart and crisp. Not a sour but not far off.

*Editor’s Comment: The 1929 Cole Porter song “You Do Something To Me” has the lyric “Do do that voodoo that you do so well”. The song became a Sinatra standard. The line was used by the character Hedley Lamarr in the Mel Brooks movie “Blazing Saddles” when sending off his goon squad to terrorize the town of Rock Ridge.

**Editor’s Comment: Japan is one of the East Asian nations known for it’s yuzu production. Yuzu is a small citrus fruit like a clementine with a tart taste mix between a grapefruit and a mandarin orange. It is rarely eaten as a fruit but is usually used in cooking and sauces.

**Editor’s Comment: Tsushima is an island of the Japanese archipelago. The island experiences a lot of rain so the “sunshiny shores” although a nice alliteration, are not an accurate description. Tsushima has historical significance as the first point of landing of the Mongol invasion of 1274. A small samurai contingent was overwhelmed by the Mongol attackers but one samurai So Shi Kafu, killed 25 of the enemy. The video game “Ghost of Tsushima” is based on those battles.
