When it comes to wine I know it comes in a bottle, bag or box, but that’s the extent of my knowledge of the vintner and the vine. As far a vine theory goes, it sounds confusing, confounding and beyond comprehension, to me anyway. But it comes as no surprise that a Niagara based brewer wouldn’t be able to resist stomping on a few grapes and slipping them into the mash to see what transpires. And what transpires is this Brut IPA.

Previous Brut samplings included a poetic Grapefruit Brut, and the anxiety inducing but ultimately much appreciated Avocado Brut. I wonder of anyone at the bar would notice if I ordered a Ceasar and a Brut and asked for a knife as well.*

We have enjoyed a few Cold Break brews in our day. Their Sublime IPA was.  And we navigated their Dark Waters successfully. Time to do some theorizing.

A light bright effervescent pour, some bubbles but no troubles, with a not over the top bright white head. An aroma of a fizzy citrus sour, which led me apprehensively to my first quaff. Light stone fruit, not that fizzy, with a touch of hops and a pinch of bitters. A pleasant surprise, the aroma not at all indicative of the taste. Part way through the theory the grapes enter the equation, definitely in there but subtle enough not to alter the results. What was once a basic session IPA is now a complex craft.  When I ignore the grapes I’m good to go, but they’re in there I know, how can I not know, you know.

I nice light IPA, not too bubbly, not too grapey, a bit complex for such a light brew but well balanced. Different, not for everyone, but an OK departure from the ordinary, in theory anyway.

**Editor’s Comment: Struggling Vine Theory suggest that a struggling vine produces better wine grapes than a vine grown in ideal conditions.
