This poem is not a weighty tome, just a simple tome to foam,
Something in Niagara’s amiss, the Maid of the Mist is missing her mist.
Tell the poor lass what’s come to pass is it’s in my glass en masse.
But not to worry we’re in no hurry,
We won’t be late, there’s a beer to rate, we can only hope it’s worth the wait.
The Exchange is a concept brewery. Here’s how it works. I give them money in exchange for one of their tasty beers. Maybe not a novel concept but I think Adam Smith would approve.* However, there is a caveat (isn’t there always). If it doesn’t fit or I don’t like it, sorry, NO EXCHANGES. That hasn’t been an issue so far as we have sampled a few of the brews. ** Their Guza was very good, their Two Way was A-OK, and their No.2 was number 1 in our books. Now the fruit farmers have made a stand!
As the culturally significant rhyme that introduced this review would suggest, there was no lack of foam on this one. A thick, dense and intense froth that had no intention of going away quietly or even eventually. As for the aroma, this brew couldn’t get it through its thick head. But once I navigated through the fog, I found a fresh fruit peach and strawberry sweet quaff with a subtle bitter finish. Yep, that’s exactly what it is and well worth the wait. As it evolved the fruit scaled back a bit to make room for more bitters as it began to earn its 45 IBU status.
From a fruit forward foam fest, the froth eventually subsided, and a balance emerged. A fruitful IPA that starts out all peachy and strawberry but eventually lets the hops join in too. I liked this summery mix of fruit and bitters. A Niagara fruit stand without the grapes, the wine can have them.
